Hello,
Haynes tells to apply thread- lock to the balljoint thread and adds a drawing, but I don't see how this drawing describes the balljoint.
How, and how much, to apply so it will be possible to disassemble it later with hand tools?

I have changed many ball joints on my a-series metro's and driven many miles with the ones I have changed and this includes the car I race.
I have never applied thread lock to the ball joint threads. On the contrary I apply copper grease and then tighten them really good with my air wrench and a huge socket made for the purpose (the threaded stud has to be able to fit in side the socket which it doesn't normally and then finish off by bending the largs shim both up around the ball joint and down around the hub. This has never caused me problem neither when fitting nor removing them again when worn out.

As to bending the tabs for the lower balljoint, I find them difficult to a access . Is there a special method to do it?

I usually use a sharp/pointy screwdriver and softly hammer it in bellow the locking plate and the hub to get the bending going. Other wise you can use a solid metal rod like a used rocker shaft and then position one end on the plate in the correct angle and hammer on the other. those kinds of shafts transfer the hammering nicely.
